This knowledge is essential, but to start a restaurant requires more than hands-on experience with getting the food to the customer’s table. There’s the business side, including inventory management, health regulations and standards, accounting, linen service and general decor. You need capital too. An upscale restaurant in the historic district of town can be quite an expensive proposition.
